The Many Reasons to Love Autumn

“Delicious autumn! My very soul is wedded to it, and if I were a bird I would fly

about the earth seeking the successive autumns.”

– George Eliot

Our neighbor brought us some beautiful apples from the tree in his yard. Perfect for baking some yummy Apple Bread. They look so lovely in the wooden bowl, though… I hate to lose my decorations. Here is my favorite recipe for Apple Bread from Gooseberry Patch. It goes great with Autumn Soups:

3 eggs                                                                         1 t. baking soda
2 c. sugar                                                                    1 t. cinnamon
1 c. oil                                                                         3 to 4 apples, cored and chopped
1 T. vanilla extract                                                      1 c. chopped pecans
3 c. all-purpose flour

Combine eggs, sugar, oil and vanilla until well mixed. Combine flour, baking soda and cinnamon; stir into egg mixture. Fold in apples and pecans. Divide equally between 2 greased and floured 9″x5″ loaf pans. Bake at 325 degrees for 1 hour and 10 minutes. Makes 2 loaves.

This weekend we are headed out for our 2nd annual fall camping trip. We had such a wonderful time last year, we decided to make it a yearly event. Looks like some rain this weekend so we are packing the tarps and rain jackets… but we are praying for sunshine! I know we’ll have fun regardless of the weather. As long as we’re all together… that’s what matters most. Have a wonderful weekend. Enjoy this beautiful season!

    Missy,
Your house looks so very cozy. I’d love to pull up, knock on the door and enjoy a lovely cup of cider or Hot Cocoa with you. :)

I’m going to have to try your Apple Bread sometime. It sounds delicious. Have fun on your camping trip!

Ohhh…the apple bread is making our mouths water. Here we are ending our term in Nicaragua. No apples, flour is a rarity, no brown sugar. I can make a mean tortilla! We love your website and will flag it to watch all the time. There is so much to read.

Give our love to all of your family,
Tio David & Tia Mary Beth

    Hi Melissa,

Your blog is simply delightful! I found it whilst searching for fall-related things for my own blog. I adore that George Elliot quote, too, and think fall is one of the best seasons.

Anyway, nice to make your acquaintance :) If you’d like you can check out my blog: http://jessilosophy.blogspot.com

    Best wishes,
    Jessica
